What is the difference between Server and Channel

What is the difference? Is the Server like what they use for like choosing which Region to use like US/AS/etc?

I am very confused because you can connect to 2 things (Server and Channel) :/

Server is what you connect to. Think of it as a post office. Channel is what you join -- think of it as a house. Post office sends mail to addresses, so the server also sends messages to channels. Each channel can be a completely different instance of whatever you need it to be -- a different level, a different game even, it's up to you. The server doesn't care, it simply allows messages to be passed through it.

Thanks I think I get it and is it required to use both Server and channel?

No, but in most cases you will want to. You can communicate without connecting to the server, but only via LAN broadcasts that are sent to everyone on the network. You can communicate without joining a channel, but again only via broadcasts (but this time they go to everyone on the server). You can also send direct RFCs to other players (think private messages) without having to be in a channel.
