Why?
Because we work out of the highest res and use max size but always display at max size. Atlas currently doesn't resize images to max size so I am wasting a lot of space which forces me to go through 100s of images and resize them by hand (ok by photoshop script) to fit 128x and then refresh all these images.

In fact I'm seeing something weird happening : when I add an image to the atlas, the max size of that image gets reset to the maximum possible.

Doesn't work that way. Sprites are supposed to be put into Unity pixel perfect - not resized by maxsize. The reason it switches it off and sets the max size to 4096x4096 is exactly to make sure that sprites are put in atlases as pixel perfect.

I suggest you keep your super high res source files and your output to atlas files separate.
